The best vegetarian cottage cheese dip
One thing I learned through onemigraine dietThat's how amazing cottage cheese can be if you just mix it up. As someone who normally hates texture, this was a game changer for me. I made this sauce to accompany another new recipe similar to mine.Roast Chicken Skewers. It was delicious and my husband went to buy more curds the next day!

Varieties of cottage cheese
Here are some favorite brands that I like to use for that dip. I recommend choosing one with at least 4% fat for the best texture and flavor, but it's always up to you.
- Margarita- This popular and easy-to-find brand contains minimal ingredients: fermented milk, cream, salt, and vitamin A.
- friendship dairy- Friendship has some low-sodium versions that contain around 2% of the daily value for sodium. They also do a pre-whipped version, but it can be hard to find.
- store brands- You may find that a store brand like Kroger, Whole Foods, or Wegman works well for you. I recommend oneno gums or live active cultures.
Ingredients

- curd- I used a "regular" fat-free version to test the recipe.
- Zucchini- A small to medium size about 6 ounces total.
- it- Use 3-4 small or medium cloves, depending on how strong you like the garlic flavor. Roasted garlic will soften.
- Oil- Extra virgin olive oil is recommended.
- Zaatar- This is a spice mix that usually contains cumin, sesame and sumac. I find it popular now and easier to find in most grocery store spice sections. Other seasonings that would work well here are dried shallots, dill, or parsley.
How to make cottage cheese sauce
Step 1: Roasted Zucchini and Garlic. This can be done in onefrying pan(quick!) or astandard oven. For the deep fryer, set it to 400 degrees Fahrenheit. Coat both sides of the zucchini with olive oil, salt, and pepper. Sauté whole (unpeeled) garlic cloves and zucchini for a total of 15 to 16 minutes, removing garlic, about 8 to 10 minutes, or until golden and tender.


Step 2: Mix the curd.Add the cottage cheese to a small blender or food processor and blend until light and fluffy, scraping down the sides if necessary. Transfer to a bowl.

Step 3: Mix the zucchini and garlic.In the same food processor (no need to clean it), add the zucchini. Squeeze the roasted garlic from its skin and add it to the food processor. Mix until smooth.
Step 4: Mix it up.match thewhipped cottage cheesewith the zucchini mixture, wrapping with a spatula so that it is light and airy. Taste and adjust seasonings. Top with a drizzle of olive oil and the za'atar mixture.
tips for success

- use asmall to medium zucchini, about 6 ounces total. This way you don't overload the curd with zucchini and keep a creamy and airy texture.
- Afrying panit speeds up the cooking process, but it can also be baked in the oven at about 425 degrees Fahrenheit for 18 to 20 minutes or until golden brown.
- itincreases in flavor the longer it sits. So if you plan on making this ahead of time, be careful with the garlic cloves unless you're a big fan of garlic.
- let the divelet cool for at least 30 minutesto combine the flavors.

Keep the cottage cheese sauceIn the fridgein a closed container3-5 in diameter.The longer it sits, the sauce can become watery, as the salt draws the moisture out of the zucchini. It won't affect the flavor, just stir again before serving. I do not recommend freezing.

Do you prefer a food processor or a blender?
I find that a food processor does a much better job of making whipped cottage cheese because the blade is closer to the bottom of the bowl, so nothing goes to waste. With that being said, any can be used for this recipe.

Ingredients
- 1 6 complements zucchini (small to medium)
- 2 teaspoons extra virgin olive oil plus more for drizzling
- 16 ounces package curd
- 3-4 small to medium unpeeled garlic cloves
- 1 teaspoon zaatar
- kosher salt and black pepper to taste

Instructions
Preheat oven to 425 degrees Fahrenheit or deep fryer to 400F. Cut the zucchini in half lengthwise and drizzle with olive oil on all sides, season with salt and pepper. Put the zucchini together with the garlic (peeled) in the air fryer or in the oven.
Cook for 8 to 10 minutes and check the garlic. Remove when golden and soft. Flip the zucchini. Continue cooking the zucchini (airfryer: about 15-16 minutes, oven: 18-20 minutes) or until golden.
Add the cottage cheese to a food processor or blender and blend until smooth and airy. Transfer to a bowl. Add the zucchini mixture and squeeze the garlic cloves out of the skin (they should be soft and come off easily). Mix until smooth.
Fold the zucchini mixture into the quark mixture. Finish with za'atar and olive oil. Taste and adjust the spices. I used whole soda cream cheese and didn't feel the need to add salt. Refrigerate for 30 minutes for best flavor and serve with crackers, vegetables, meatballs or flatbread for dipping.
